I have seen many of the videos you made with Tom Spellman from Dave Wilson Nursery. In fact those videos were my inspiration for trying supposed high chill apple varieties in my home orchard. I live in Central Florida (zone 9b) and so far I have found growing apples on M111 root stock pretty easy. That root stock does well in our hot climate and seems to like the sand/clay soil mixture we have here. So far it has been easier to grow apples than citrus in Central Florida. Primarily because of all the diseases attacking the citrus industry in the state many commercial orchards are switching to some low chill peaches. Not sure if they are trying apples though. I am worried about fireblight but haven't seen it so far.
