The tartest apple I grow is the Lubsk Queen, an early Russian apple. Similar
to that is the Lodi. Northern Spy and Rhode Island Greening are two others
suitable to zone 4, but I don't grow them.

Seen any Pink Pearl's around? I suspect they're hardy, and mine are consistently tart. And, they're a pretty variegated pink inside. What do you plan to do with them? Cider?

I make fresh juice and have really come to appreciate my 'tart' apples {and there're apparently different definitions of "tart."}

Maybe one of our Cider boys will check in..? But they go for 'bitter'..?

Haralson, a 1922 University of Minnesota introduction is my favorite tart apple. Also look for Red Baron, State Fair and Prairie Spy.

The Apple House at the U of M Landscape Arboretum is open this time of year and is a good place to sample different hardy varieties.
