I planted 4 semi dwarf peach trees in a row 25' apart two years ago. After doing some reading (and enjoying the peaches this year RIGHT off the tree :D ) I am wonder if I can plant another peach tree in between each of the existing trees. Spacing would then be 12.5' on center .. tree to tree.

I would if I were you. I admit to being more than a little bit jealous of your ability to grow peaches, nectarines and apricots over there.

Some websites urge people to plant things way far apart, which assures that you only plant a few trees. Not good enough for me.

My nectarines are 12' on center both ways; which is just about right. I am not sure about the root stock on the older trees, but the younger trees are slower growing and are supposed to be semi-dwarf. So, 12' will be plenty for them even though the older trees are a bit crowded.
