 I have a quince shrub that has green fruits when they drop and are left they ripen to a red colour can these be used for cooking.

I'm sure they can. Taste could be variable.

I think the more important question is why do they drop when green? Mine turn a nice golden yellow before falling.

This may be a flowering quince "shrub" rather than a fruiting quince tree.

If so, those fruits are typically used in jelly-making, their flavor can be harsher

than tree fruit. They are certainly edible, experiment all you want.

Mine little flowering quince is loaded with fruit.  There are recipes.  Here is one source, there are others.  I keep reminding myself to pick them, and keep forgetting.  Might be too late, or maybe letting them ripen to the point of falling off will help the flavor.  I was thinking, make something like an apple sauce.  If I remember and get to it.  🙂

We usually make "lemonade" out of them.  Cut into gravel sized pieces, then put in water for a few minutes.  You get a few glasses out of each fruit 2-3 usually.
