On the property I live in there is around 30 olive trees that I noticed last season were full of olives. Black olives. I had already been trying think of a business I can do that will pay for the property when I saw all the olives one tree had. I started researching olive growing and read that the business is good. So my first question is where do I start? I would greatly appreciate any advice anyone can share.
Welcome to the forum. I don't have any good advice for you. I planted my Arbequina tree in the open because I'd read that they are deer resistant. Alas, they didn't tell the deer 🙁
Most of what I've paid attention to is growing them in our cooler climate in or near the Willamette Valley.
The idea of trying to make a profitable orchard is daunting to me. Hopefully some other forum members have more to contribute.
You already have a good start with many olive trees on your property located in a known commercial olive growing
area (Macala Orchards and others). A primer on the profitable business of olive growing is beyond the scope of this forum
that normally advises on home gardening for a variety of individual fruiting plants. If you have a specific question about
aspect(s) of growing olive trees, perhaps someone will respond. It would seem that pruning of existing trees would
be a starting point for you.

I did some research on Olive oil when I lived in California. I would also check the California Rare Fruit growers, I used to be a member.
