Just starting out with fruit trees in a small back yard. We just purchased 2 apple trees (Empire and Golden Delicious) on EMLA-111 rootstock.
What is the minimum size (height and width) we can train them if we espalier them?

any direction or information would be appreciated.

I have M26 and another somewhat larger rootstock espaliered and wished I had all M26.
I would not even attempt M111. It is the largest of the so-called semi-dwarf rootstock and would be very difficult to keep to a reasonable size for espalier.

Here in the UK MM111 would only be used for extremely large feature espaliers. MM106 (or M26 - a bit smaller) would be a more usual choice for an espalier, and I would allow roughly 12ft-15ft width and height for MM106 in the UK climate.
