Grafting to a tree that is really a bush

I have a Pacific Crab Apple that I'm planning to use as a rootstock for Winter Banana.

I was surprised when I received it. It is very very branched, more like a bush than a tree.

Should I remove all but the strongest, or is the normal form that Pacific Crab Apple takes? Or should I leave one as a backup in case my graft fails?

Thanks for all of your help, everyone! I hope I can get an answer on such a sunny day!?!?

Again I am not grafting expert, but I would graft a few branches and leave the rest alone. If the grafts take then shape the tree the best you can to your liking. I don't know about your specific crab but I have crabs that look like bushes and some that look like trees. Both look great in the landscape.
