Antonovka is a non-dwarfing “standard” apple rootstock.

I’ve heard of varying methods of achieving ‘full sized’ trees, but I’d beware of some. One is to plant a seed and graft onto it. That usually produces a ‘full sized’ tree. Another is to burry the graft union of a bought ‘grafted’ tree so that the top (producing portion) takes root, thus forming a ‘full sized’ root system. Each of those methods will leave you with roots susceptible to many diseases and cause an early demise of the tree. I know, I lost two beautiful apple trees as they’d been grafted (by my Great Uncle) onto seedling apple stocks.

There has not been a lot of success with dwarfing rootstock for cherry trees, but there are usually charts describing how ‘dwarfing’ a rootstock is. One of your main concerns, as with most people buying fruit trees, is to learn just what rootstock they’re on. Few retail Nurseries can tell you that! A good mail-order nursery will usually list the rootstocks, occasionally giving you a choice.

…Or, if you’re anywhere near the Willamette Valley of Oregon you can come to our Home Orchard Society Spring Propagation Fair (Scion Exchange) and have several trees put together for you that could include whatever variety you wanted - and the most vigorous rootstocks at the event. You’d walk away with ‘small trees’ (around 8 inches tall) …but they’d grow into what you actually want. And, there are experts to give you information on the rootstocks available … I’m not one of them, I just help make the connection between the two.
