The best general fruit growing book I've seen is "Growing Fruit" by Harry Baker (# ISBN-10: 1840001534, # ISBN-13: 978-1840001532), it covers most fruits in enough detail to be the only reference a beginner needs. Most of the cultivar information is of UK varieties.
A good historical book is "The Fruit Manual" by Robert Hogg published 1884 but a reprint is available (ISBN #1-904078-00-1). Another UK book but you'll be shocked to find cultivars of fruits as tropical as bananas and pineapples in amongst plums, apples etc. Very interesting book to browse through.
