I took a HOS pruning class during the dormant season and immediately came home and cut the top off my dormant Rescue pear, right where I wanted branches to sprout out, right at the level of the 1st wire for my espalier. It worked perfectly. Three branches grew come spring; two for the wire and one to grow up. I am training two to the wires and the one growing up is near where I want my next wire / next branch level. Can I cut it off now, and watch branches once again grow out to the sides? Or do I just let it grow over the spring and summer and top it off come winter?
