Ted Swensen had an extremely useful chart showing types of pear that can be grafted on quince rootstock. About 90% of the varieties will have graft compatibility issues after some number of years. Two that I remember that are ok are Warren and Conference. After grafting the compatible pear onto the quince, you can use that one as an "interstem" and then graft any other kind onto the compatible pear.
I bet that it would work with Winter Banana apple, too, but I'm not sure of it.
