OK, I looked it up. Basically, it's a tree grafted indoors.
But I found some places selling "bench grafts". A scion would be a couple of dollars, a bare root tree would be about $20, and a "bench graft" would be about $8.
Just what is "bench graft" buying?
I'm still hunting for that Hawkeye apple and finding mostly scion wood and bench grafts (whatever that means).
Cummins sells Hawkeye as a bare root on G16 or M7, neither of which is a rootstock that I want. I've got to learn how to graft.

“Bench Grafts†are what we do at our yearly scion exchange (propagation fair). With the deal you've found I suspect you’d get a two or three bud scion grafted on top of a 10 to 12 inch rootstock of the variety (cultivar at least) you requested …apparently for the same price you could buy a 2/3 year old tree from a nursery. It would be a ‘custom made tree.’
But – unless they’ve got tight-budded dormant Hawkeye scion wood, they’re talking next spring. They could ‘Bud’ (graft) in late summer to a potted (or in ground) ‘rootstock,’ but that wouldn’t be “bench graftingâ€â€¦
If, by some unreal chance they’ve still got dormant Hawkeye scions, you (or someone knowledgeable in grafting) could graft them to a ‘new’ or existing apple tree… If they’re only a ‘couple dollars,’ and could be sent to you … that would be the cheapest method.
If you could locate a ‘living Hawkeye apple’ tree, you could also Bud graft it’s ‘buds’ to an existing young tree later this summer. HOS gives a Budding class, and it’s a far easier method than bench grafting.

I don't expect to get a tree before next year. Everything here is awake and growing. It's too late to be planting bare roots.
This darn tree has turned into a quest and I want to get the tree all lined up and available in the spring. Who knows how long it is going to take me to figure out how to get the elusive thing.
I've got some other less common varieties that I won't get until next spring. Dave Wilson Nursery has a special order program. Not cheap, but they are reputed to be quality bare roots. But they don't sell Hawkeye.
The big trouble i am running into is that in the process of searching for my Hawkeye, I am finding all sorts of apples that I want as soon as I read the description. I just gotta have them!
I won't get to Portland until the scion exchange and hope to learn about grafting there.
Maybe I could time the delivery of scion wood to arrive just before the scion exchange and bring my scions over and get someone to graft them onto some root stock for me, while I watch and learn.
