There was an article that Ted wrote in the Pome News about how apples typically lose their flavor over time in storage. However, there are some apples that retain a lot of flavor and some are even said to become more flavorful in storage. Can you think of any varieties that retain or develop more flavor in storage?
Thanks,

I had a small crop of Cameo this year. They were sharp sweet and kept their flavor quite well. They are gone now, so I don't know how they'd fair over a longer time period.

I know that there are some late storage apples that are supposed to improve with storage.

Yellow delicious stores really well. They are mild and stay mild, but are about the only apple I know that is still tasty and edible even when it is half dried up and all shriveled. They dehydrate well and cook surprisingly well, considering it is a soft apple. But strong flavor isn't going to happen. Nice snack, though.
