apple scions grafted onto rootstock-now what?

I have been grating scions onto apple rootstock and they are now sitting in wet peatmoss in the basement for 10 days to allow a callus to form. My question is what to do with them after the 10 days. One site said to put them into a plastic bag in a fridge at 34 degrees until ground is 60 degrees (July in Newberg, OR). My thought is to keep them in an outdoor nursery ( mounded row of peatmoss and soil) for a year and then plant them in the orchard. Any thoughts will be appreciated.

How did you seal the graft unions? Most of us use grafting bands (long wide open rubber bands).

After you’ve joined the two pieces, and sealed them, they’re ready to plant in their permanent location, or in nice sized pots. No need to keep them refrigerated, especially in Newberg ~

I did use the grafting bands and sealent.
